I created this pizza recipe around my balsamic fig reduction. The sweet acidity of the reduction balances out the salty Upton’s Naturals Italian sausage, Violife vegan mozzarella shreds, and Violife vegan feta. Check out my basic pizza crust recipe or use a store-bought crust to save time.
Seitan Sausage, Mushroom, Leek, Arugula, and Feta Pizza with Fig Balsamic Reduction
The fig balsamic reduction is the star ingredient of this pizza. The sweet acidity of the glaze balances the saltiness of the italian sausage and cheese.
Equipment
- 1 Pizza Pan
- 1 Chef's Knife
- 1 cutting board
Ingredients
- 1 recipe Basic pizza crust
- 2 Tbsp olive oil + 1 tsp divided
- ½ cup pizza sauce
- 1 leek sliced and cleaned green and white parts
- ½ cup baby bella mushrooms sliced
- 1 box Upton’s Naturals Italian Seitan
- ½ cup Violife shredded vegan mozzarella
- 2 handfuls arugula
- ½ cup Violife vegan feta
- 2 Tbsp balsamic fig reduction
- Salt and pepper to taste
Instructions
- Preheat oven to 450°
- Follow the basic pizza crust recipe to prepare the crust if using
- Prepare balsamic fig glaze according to recipe and set aside
- Slice and clean leeks and slice mushrooms
- Heat 1 tsp of olive oil in a medium skillet and sautee leeks until softened for 7-10 minutes stirring occasionally
- Lightly oil pizza pan or parchment paper if using a pizza stone
- Spread dough out into two 12 inch circular shapes
- Brush each dough with olive oil and then top with pizza sauce and vegan mozzarella shreds
- Continue topping with Italian seitan sausage, leeks, and mushrooms and salt and pepper to taste
- Cook pizza for 15 minutes or until crust is golden
- Remove pizza from the oven and top with arugula, crumbled vegan feta, drizzle with balsamic fig reduction, and serve
Notes
You can buy fig balsamic reduction at gourmet or well-stocked grocery stores but it can be pricey. Using only two ingredients and 15 minutes you can easily make your own for a fraction of the price.
