Soy curls are rich in fiber and protein and made of non-GMO soybeans that are processed without chemicals and packaged with neither additives nor preservatives. This meat alternative is quick to prepare and can be used in a multitude of recipes like stir-frys, tacos, wraps, or on their own. They are a versatile ingredient because they take on the flavors of whatever seasonings you decide to use. This recipe features soy curls as a plant-based substitute for beef in tacos. I recommend trying this recipe in tacos, and fajitas as well as on my taco pizza recipe.
Soy Curl Taco Meat
Equipment
- 1 medium-sized mixing bowl
- Measuring spoons
- 1 Medium skillet
Ingredients
- 4 oz Soy curls
- 2 cups vegetable broth
- 2 tsp olive oil
- 1 onion chopped
- ½ cup salsa
- ½ cup walnuts chopped
- 1 Tbsp chili powder
- 2 tsp cumin
- 1 tsp smoked paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- Salt and pepper to taste
Instructions
- Place soy curls in a large bowl and cover with warm vegetable broth to rehydrate and soak for 15 minutes; then drain in a colander
- While soy curls are soaking chop the onion and walnuts
- Heat a large skillet over medium heat and add oil
- Sautee onions until translucent
- Add drained soy curls and walnuts to pan and sautee for 3 – 5 minutes until they are beginning to brown
- Add spices and cook and additional 2 -3 minutes
- Add salsa and continue to cook for 2 -3 minutes
