I love hummus toast because it can be customized using any ingredients you have on hand. This recipe is inspired by the hummus toast my husband and I had for breakfast at Toast & Coffee in Oklahoma City while traveling cross country. Loading your hummus toast with vegetables is a great way to pack nutrients into your meal. I also enjoy adding chia and hemp seeds for extra protein and omega-3 fatty acids. The radish sprouts contain vitamins A, B, C, E, and K, they also deliver calcium iron, magnesium, phosphorus, potassium, and zinc. Also, growing your own sprouts is easier than you think. Hummus Toast
Equipment
- Chef's Knife
- cutting board
- vegetable peeler
Ingredients
- 1 slice of sourdough bread
- 2 Tbsp hummus
- 1 leaf of lacinato kale julienned
- ¼ cup shredded carrot
- ¼ cup radish sprouts
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Toast sourdough bread
- Spread hummus over bread
- Top hummus with kale, carrot, and sprouts
- Drizzle olive oil over vegetables
- Salt and pepper to taste
