Have you ever been to a restaurant just to find that the only breakfast item on the menu even remotely plant-based is avocado toast covered in cheese or with a giant egg plopped on top? Once you remove all of the animal products you end up paying $14 for plain avocado toast. This recipe is my version of an elevated plant-based avocado toast that I would dream of seeing on a restaurant menu when I meet my friends for brunch. Avocado is topped with sweet heirloom cherry tomatoes, creamy vegan feta, spicy arugula, and is finished with a drizzle of balsamic glaze. Avocado Toast
Equipment
- serrated pairing knife
- cutting board
Ingredients
- 1 slice sourdough bread
- ½ avocado
- 5 cherry tomatoes halved
- 1 Tbsp vegan feta crumbled
- Handful of arugula
- 1 Tbsp balsamic glaze
- Salt and pepper to taste
Instructions
- Toast sourdough bread
- Smash avocado over bread
- Top avocado with cherry tomatoes
- Add feta and arugula
- Drizzle with balsamic glaze
- Salt and pepper to taste
