Avocado Toast with Heirloom Cherry Tomatoes, Vegan Feta, Arugula, and a Balsamic Glaze

Have you ever been to a restaurant just to find that the only breakfast item on the menu even remotely plant-based is avocado toast covered in cheese or with a giant egg plopped on top? Once you remove all of the animal products you end up paying $14 for plain avocado toast. This recipe is my version of an elevated plant-based avocado toast that I would dream of seeing on a restaurant menu when I meet my friends for brunch. Avocado is topped with sweet heirloom cherry tomatoes, creamy vegan feta, spicy arugula, and is finished with a drizzle of balsamic glaze. Avocado Toast

Elevated plant-based version of the fancy avocado toast you see on restaurant menus.

Equipment

Ingredients

  • 1 slice sourdough bread
  • ½ avocado
  • 5 cherry tomatoes halved
  • 1 Tbsp vegan feta crumbled
  • Handful of arugula
  • 1 Tbsp balsamic glaze
  • Salt and pepper to taste

Instructions

  • Toast sourdough bread
    chopped tomatoes
  • Smash avocado over bread
    Avocado Toast
  • Top avocado with cherry tomatoes
    Avocado Toast
  • Add feta and arugula
    Avocado Toast
  • Drizzle with balsamic glaze
    Avocado Toast
  • Salt and pepper to taste
