Sugar Cookie Truffles

If you want to make a sweet treat this holiday season but aren’t a big fan of baking this recipe is for you. These truffles are vegan and look pretty fancy for how easy they are to throw together. They make a perfect holiday gift or are a great addition to any holiday party.

The only baking involved in this recipe is the 5 minutes you will spend with your flour in the oven to kill the bacteria. Yes, you heard me right… apparently, you are not supposed to eat raw flour. I always thought eggs were the culprit when it comes to salmonella. I felt safe eating raw cooking dough because it was vegan. However, in a recent nutrition class, I learned that you can get sick from eating raw flour. If you bake it at 350°F for 5 minutes it will kill the bacteria and the cookie dough will be safe to eat.

I use two different types of chocolate in this recipe to add variety but feel free to stick to one if desired. All your friends and family will think you spent hours making this recipe but it is pretty quick and easy to prepare. Also, I highly recommend using store-bought vegan white chocolate. I tried to make my own and it was not coating the truffles well. I used King David Gourmet white coco chips but there are a ton of different options online.

Sugar Cookie Christmas Truffles

This quick and easy truffle recipe is a nice alternative to baking tons of cookies.

Equipment

  • baking sheet
  • hand held mixer
  • Mixing bowls various sizes
  • Measuring cups
  • Measuring spoons

Ingredients

  • 2 cups all purpose flour
  • ¾ cup Earth Balance butter softened
  • ¾ cup cane sugar
  • 2 Tbsp plant-based milk
  • 1 Tbsp corn starch
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 cup vegan white chocolate for dipping
  • 1 cup vegan semisweet chocolate for dipping
  • red and green sprinkles for decoration

Instructions

  • Preheat the oven to 350°F
  • Place the flour on a parchment lined baking sheet and bake for 5 minutes to kill bacteria
  • With a mixer beat the sugar and butter together for 2 – 3 minutes

  • Add in milk, corn starch, and vanilla and beat on high for 1 minute
  • Add one cup of flour to the bowl and the salt and mix on low until combined
  • Add the remaining flour and mix until combined; the dough should be the consistency of playdough; add more flour if it is too wet

  • Chill dough in the refrigerator for 1 hour
  • Line a baking sheet with parchment paper
  • Roll dough into 1 inch balls and set on baking sheet and place back into the refrigerator until white chocolate is prepared

  • Melt white chocolate in a microwave safe dish at 30 second intervals stirring in between each interval until melted
  • Use a toothpick to dip 20 dough balls into white chocolate and set back on the baking sheet; place sprinkles on top immediately after dipping in chocolate

  • Repeat to previous steps with the semisweet chocolate for the remaining dough balls; place sprinkles on top immediately after dipping in chocolate

  • Store in fridge until ready to serve

Notes

You do not have to use two separate chocolates if you prefer one to the other.
