If you haven’t experienced the magic that is cookie butter now is the time. These cookie butter truffles are a no-bake sweet treat that is perfect for the holidays…or whenever your sweet craving arises. Using four simple ingredients these truffles come together easily and they look like you bought them from a bakery!
This recipe incorporates speculoos cookies which can be found in the cookie section of your grocery store. I bought mine from Trader Joe’s. Biscoff cookie butter can be found at the grocery store as well. I purchased speculoos cookie butter from Trader Joe’s but the two can be used interchangeably. I highly recommend trying a spoonful straight from the jar while you are putting together your truffles. To add some tanginess to the recipe I added cream cheese. I follow a plant-based diet so I used Kite Hill’s vegan cream cheese but you could use whatever you have on hand.
When coating the truffles in chocolate and adding decoration I used both vegan white and semisweet chocolate but please use whatever suits your taste. I also recommend buying your vegan white chocolate for this recipe instead of making it. After three batches of vegan white chocolate that wasn’t coating the truffles I gave up and used King David white chocolate chips which I purchased through Amazon.
Cookie Butter Truffles
Equipment
- Food processor
- baking sheet
- Mixing bowls various sizes
- Measuring cups
- Measuring spoons
Ingredients
- 1 ½ packages of speculous cookies
- ⅓ cup vegan cream cheese
- ⅛ cup of cookie butter
- 1 cup vegan white chocolate for dipping
- 1 cup of semisweet chocolate for dipping
- Melted chocolate and speculous cookie crumbles for decoration
Instructions
- Pulse the cookies into fine crumbs in a food processor
- In a mixing bowl combine the cookie crumbs, cream cheese, and cookie butter
- Chill dough in fridge for an hour
- Roll the dough into 40 one inch balls and place on a parchment lined baking sheet
- Melt white chocolate in a microwave safe dish at 30 second intervals stirring in between each interval until melted
- Use a toothpick to dip dough balls into melted white chocolate and place back on the baking sheet
- Repeat steps with semisweet chocolate
- Allow chocolate covered dough to set in fridge for 20 minutes
- Decorate with melted semisweet chocolate, white chocolate, and cookie crumbs if desired
