Easy Veggie Soba Noodles

This recipe is so easy to make and is perfect for a filling lunch or dinner. Ingredients

  • 1 package soba noodles
  • 1 yellow bell pepper sliced
  • 8 oz shiitake mushrooms sliced thin
  • 3 green onions thinly sliced and separate green and white parts
  • 1 bunch curly kale
  • 2 cloves garlic minced
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp avocado oil
  • ¼ cup fresh herbs I used basil and mint
  • crushed red pepper for serving
  • peanuts for serving

Instructions

  • Bring a small pot of water to a boil and c your soba noodles for around 10 minutes before straining and rinsing under cold water

  • In a separate pan, heat oil and sauté bell pepper, mushrooms, and white part of onion until softened; about 5 minutes

  • Add in garlic and cook until fragrant then add in kale and stir until softened

  • Stir in noodles and soy sauce until heated through

  • Remove from heat and add remaining ingredients and serve
