Easy Veggie Soba Noodles
Equipment
- Skillet
- large pot
- colander
- Chef's Knife
- cutting board
Ingredients
- 1 package soba noodles
- 1 yellow bell pepper sliced
- 8 oz shiitake mushrooms sliced thin
- 3 green onions thinly sliced and separate green and white parts
- 1 bunch curly kale
- 2 cloves garlic minced
- ¼ cup low-sodium soy sauce
- 1 Tbsp avocado oil
- ¼ cup fresh herbs I used basil and mint
- crushed red pepper for serving
- peanuts for serving
Instructions
- Bring a small pot of water to a boil and c your soba noodles for around 10 minutes before straining and rinsing under cold water
- In a separate pan, heat oil and sauté bell pepper, mushrooms, and white part of onion until softened; about 5 minutes
- Add in garlic and cook until fragrant then add in kale and stir until softened
- Stir in noodles and soy sauce until heated through
- Remove from heat and add remaining ingredients and serve
