I don’t like to spend a lot of time over a hot stove when the weather starts to get warmer. My tahini chickpea veggie wraps are full of plant-based protein and dietary fiber from the chickpeas. The healthy fat from the tahini acts as a dressing for the loads of vegetables I pack into this wrap.
You can use whole wheat lavash bread like I have in this post or whole wheat tortillas work as well. Change up the vegetables to suit your taste. Anything in your refrigerator will work. The same goes for the tahini. If you are not a fan you could substitute in any salad dressing or sauce you prefer.
This recipe lends well to meal prep and picnics because the wraps can be made ahead of time and stored in the refrigerator until ready to eat. This time of year I love to be outside so foods that I can pack for a hike or picnic are an ideal choice.

Tahini Chickpea Veggie Wraps
Equipment
- cutting board
- Chef's Knife
Ingredients
- 15 oz can chickpeas
- 2 Tbsp tahini plus more for serving
- 1 Tbsp dijon mustard
- juice from one lemon
- fresh or dried herbs to taste
- salt and pepper to taste
- 4 lavash bread
- 2 cups spinach leaves
- 1 cup broccoli sprouts
- 1 red bell pepper cut into strips
- 1 cup carrots shredded
- 1 Persian cucumber sliced
Instructions
- In a medium bowl, mash chickpeas with tahini, lemon juice, fresh herbs, salt, and pepper
- Place your lavash on a plate and layer ingredients in a line on the edge of your wrap starting with spinach, sprouts, chickpea mixture, carrots, bell pepper, and cucumber
- Drizzle your desired amount of tahini and roll the wrap
