Mediterranean Diet Chickpea Dip

247

Make this Mediterranean diet chickpea dip for your next summer party or when it is just too hot to turn on the oven. This recipe is healthy, easy to make, and no cooking required.

The chickpea base is rich in plant-based protein and dietary fiber. The yogurt layer is creamy and smooth. And the spinach, shallot, vegan feta, kalamata olive, and mint toppings are packed with Mediterranean flavors.

I recommend serving this dip with pita chips, crackers, endive, or bell pepper slices. If you are looking for more dip inspiration check out my everything bagel dip or see how I doctor up plain store-bought hummus into a gourmet snack.
