Make this Mediterranean diet chickpea dip for your next summer party or when it is just too hot to turn on the oven. This recipe is healthy, easy to make, and no cooking required.
The chickpea base is rich in plant-based protein and dietary fiber. The yogurt layer is creamy and smooth. And the spinach, shallot, vegan feta, kalamata olive, and mint toppings are packed with Mediterranean flavors.

Mediterranean Diet Chickpea Dip
Equipment
- 9" pie dish
- Measuring cups
- Measuring spoons
- Mixing bowls
Ingredients
- 15 oz can chickpeas drained and rinsed
- 1 Tbsp olive oil plus more for topping
- 1 Tbsp za’atar plus more for topping
- ¼ tsp garlic powder
- salt and pepper to taste
- ½ cup vegan cream cheese softened
- ¼ cup vegan Greek yogurt
- juice from ½ lemon
- ¾ cup fresh spinach chopped
- ⅛ cup shallot chopped
- ¼ cup vegan feta cheese crumbled
- ¼ cup Kalamata olives sliced and pitted
- 1 Tbsp fresh mint sliced
Instructions
- In a medium mixing bowl combine chickpeas, olive oil, za’atar, garlic powder, salt, and pepper and mash until smooth.
- Spread chickpea mixture in an even layer into a 9-inch pie dish.
- In a small mixing bowl combine cream cheese, Greek yogurt, lemon juice, and salt and pepper to taste.
- Spread the yogurt mixture over the chickpea layer.
- Top the dip with a sprinkle of spinach, shallot, vegan feta, olives, and mint leaves.
- Drizzle with additional olive oil, za’atar, and salt and pepper if desired.
- Serve with pita chips, crackers, and fresh veggies.
