White Whole Wheat Pizza Crust

This pizza dough recipe has been a game-changer. You don’t have to wait for it to rise and you get all of the benefits of whole wheat but in a lighter dough. White whole wheat is a whole grain that is milled from a different variety of wheat that is lighter in color. White whole wheat flour is not as fluffy as all purpose flour and doesn’t have the bitter flavor that regular whole wheat can have. By incorporating whole grains into your diet you increase your consumption of dietary fiber and protein as well as iron, potassium, and magnesium.

If you want to incorporate whole wheat into your diet you can begin by subbing white whole wheat flour for half of your all purpose flour in recipes. If you want to use white whole wheat flour for the whole recipe just make sure to incorporate more liquid. King Arthur Flour recommends 2 teaspoons of liquid per each cup of flour.

A great way to get started is by switching out your normal pizza dough for this quick and easy white whole wheat flour recipe. I used King Arthur Flour for this dough which you can find online if it isn’t at your local grocery store. I also encourage you to incorporate the optional vegan parmesan in this recipe by using my three-ingredient vegan parmesan recipe. It is loaded with healthy walnuts which have omega-3 fatty acids and antioxidants which can help lower your LDL cholesterol and reduce your risk of cardiovascular disease. This powerhouse parmesan recipe also incorporates nutritional yeast which is a great source of plant-based protein and B vitamins.

White Whole Wheat Pizza Crust

This is the perfect pizza crust recipe with no rising time and all the benefits of whole wheat but in a lighter dough.
Servings 2 12″ pizzas
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Equipment

  • large mixing bowl
  • small mixing bowl
  • Measuring cups
  • Measuring spoons

Ingredients

  • 1 cup warm water
  • 1 Tbsp olive oil
  • 1 Tbsp agave
  • 2 ¼ tsp instant yeast
  • 2 ¾ cup white whole wheat flour
  • 1 tsp kosher salt
  • ¼ cup grated vegan parmesan optional

Instructions

  • In a small mixing bowl combine water, oil, agave, and yeast and let sit for 5 minutes until bubbly.
  • In a large mixing bowl combine flour, salt, and parmesan if using.
  • Pour the wet mixture into the dry mixture and use a wooden spoon to combine until all of the flour has been incorporated into the dough.
  • On a lightly floured surface knead the dough a few times until is is smooth.
  • Divide dough into two equal balls and roll into 12” circles. The dough should be even and thin.
  • Place dough circles onto parchment paper and brush with a light coating of oil and top with desired ingredients.
  • Cook pizza at 500°F for 8-10 minutes. If cooking on a pizza stone it may reduce the cooking time.

Notes

If you want to make a pan style pizza don’t divide the dough into two pieces. Instead roll the dough into a 16” circle. Cooking with a thicker crust will increase cooking time to 15-20 minutes.
