Ingredients

  • 8 oz tater tots
  • 1 Tbsp ground cumin
  • 2 tsp curry powder
  • 2 tsp dried thyme
  • 1 tsp ground turmeric
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ cup water
  • 1 Tbsp avocado oil
  • 2 packages firm tofu drained and pressed
  • 1 bunch green onions chopped
  • ½ cup nutritional yeast
  • 6 large burrito sized tortillas
  • 1 recipe tempeh bacon or 1 package vegan bacon
  • 1 avocado sliced
  • Hot sauce for serving

White Bean Nacho Cheese Sauce Ingredients

  • 15 oz cannellini beans
  • 1 jalapeno seeded and chopped
  • 1 cup unsweetened original plant-based milk
  • ½ cup nutritional yeast
  • 2 cloves garlic peeled
  • Juice from ½ lemon
  • 2 Tbsp taco seasoning
  • 1 Tbsp corn starch
  • Salt to taste

Instructions

  • Cook tater tots by following package instructions.
  • In a small mixing bowl combine the cumin, curry powder, thyme, turmeric, garlic powder, onion powder, salt, and water.
  • Heat oil in a skillet over medium heat.
  • Break tofu into smaller chunks and add to skillet with green onions.
  • Cook tofu for 10-12 minutes breaking tofu up further when stirring occasionally.
  • While tofu is cooking add all of the cheese sauce ingredients to a high speed blender and blend for 5 minutes until thickened and well mixed.
  • Add spice mixture to pan with nutritional yeast and stir to combine and heat through for about 5 minutes.
  • Divide tofu scramble between tortillas and top with tater tots, tempeh bacon, avocado, and vegan cheese.
  • Wrap burrito and serve with favorite hot sauce.

Notes

Make a double batch and freeze the burritos wrapped in foil for a quick grab and go breakfast.
