Quick Tips to “Veganize” Any Breakfast Burrito

  • You can customize the filling of your vegan breakfast burritos by adding ingredients like sautéed vegetables (such as bell peppers, onions, and mushrooms) or vegan breakfast sausage.
  • If you’re short on time, you can use store-bought vegan egg substitutes instead of tofu for the scramble.
  • To make the burritos ahead of time for meal prep, wrap them tightly in aluminum foil or plastic wrap and store them in the refrigerator. When ready to eat, simply reheat them in the microwave or oven until warmed through.
