In a medium saucepan over low-medium heat add coconut oil, almond coconut spread, coconut nectar, and salt and simmer stirring constantly for 2 minutes
Remove from heat and stir in baking soda and vanilla
Immediately pour over popped corn and stir well to coat all of the pieces

You can add any nuts of your choice to the popped corn. I love using macadamia nuts in this recipe.
