This 15-minute and 7-ingredient vegan caramel corn recipe uses coconut-derived ingredients to keep the glycemic index lower than your traditional recipe. This recipe is vegan and full of a rich coconut almond caramel flavor thanks to the use of a few Nutiva products.
In this recipe, I removed the traditional butter ingredient and replaced it with Nutiva’s organic virgin coconut oil. Using cold pressed and unrefined coconut oil is what gives this caramel corn its rich coconut flavor. Next, I incorporated Nutiva’s organic almond coconut spread. This spread is keto friendly and has only 3g of sugar per serving. The roasted, sweet, and salty notes of this spread add a special level of flavor to the caramel sauce that you won’t find with your traditional caramel corn recipe. Finally, instead of using brown sugar, I substituted Nutiva’s Coconut Secret Coconut Nectar. Coconut nectar has a low Glycemic Index so it can be safe for people with diabetes by improving blood sugar levels. Coconut Nectar is also a rich source of potassium, magnesium, zinc, and iron. It is full of vitamins B1, B2, B3, C, and B6.
This recipe is so quick and easy that it will become your new favorite snack for movie night. You can change up this recipe by adding some of your favorite add-ins like peanuts, chocolate chips, or my favorite macadamia nuts. Coconut Almond Vegan Caramel Corn
Equipment
- medium saucepan
- large mixing bowl
- Measuring cups
- Measuring spoons
Ingredients
- 1 Tbsp Nutiva virgin coconut oil
- ¼ cup Nutiva almond coconut spread
- 3 Tbsp Nutiva Coconut Secret coconut nectar
- ½ tsp sea salt
- ¼ tsp baking soda
- ½ tsp vanilla
- 12 cups popped corn
Instructions
- Place the popped corn in a large bowl
- In a medium saucepan over low-medium heat add coconut oil, almond coconut spread, coconut nectar, and salt and simmer stirring constantly for 2 minutes
- Remove from heat and stir in baking soda and vanilla
- Immediately pour over popped corn and stir well to coat all of the pieces
