With three ingredients: nutritional yeast, walnuts, kosher salt, and a food processor you can have vegan parmesan in five minutes. This recipe is a pantry staple that I have on hand at all times. It keeps well in an air-tight container for months.
Vegan parmesan is great as a topping on pizza, salad, soup, and pasta. I even use it on my homemade garlic bread. The nutty cheesiness of the nutritional yeast adds flavor while giving you your daily dose of vitamin B12. The walnut adds healthy fat and gives the vegan parmesan its cheese-like texture.
I encourage you to add other ingredients you may enjoy personalizing the recipe like garlic, herbs, or other spices. This has been one of my go-to recipes since I became vegan so I hope it becomes a favorite of yours as well.
