Green Goddess Lentil Kale Wraps

I love creating recipes that contain vegetables, beans, and whole grains. These green goddess lentil kale wraps are bringing this trifecta with lentils, kale, and whole wheat lavash bread. To make this recipe super quick I used canned lentils. This recipe also features some of my favorite Trader Joe’s products: roasted red pepper spread and green goddess dressing. Using these already-prepared ingredients helps you get these wraps on the table in under 30 minutes.

If you have an extra five minutes I recommend subbing the red pepper spread for my roasted red pepper romesco sauce. After trying it once you will use it on everything! You can also make your own lentils from scratch. You will need about a cup and a half of cooked lentils for this recipe.

Green Goddess Lentil Kale Wraps

Some of my favorite ingredients from Trader Joe's bring this healthy wrap together quickly and is perfect for weekly meal prep.
Servings 4 wraps
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Equipment

  • cutting board
  • Chef's Knife
  • Skillet

Ingredients

  • 1 Tbsp olive oil
  • 1 bunch kale chopped
  • ¾ tsp kosher salt
  • 15 oz can lentils
  • 2 Tbsp red pepper sauce
  • 4 lavash bread
  • vegan green goddess dressing for serving

Instructions

  • In a large saucepan heat the olive oil and add the garlic and kale and cook until the kale has wilted; about 5 minutes

  • Add in lentils, red pepper sauce, and salt and cook until all ingredients are heated through; about 2-3 minutes

  • Remove from heat and divide lentil mixture among the wraps and drizzle with the desired amount of green goddess dressing; wrap and serve
