Traditionally made with tomatoes this version of Romesco sauce touts lightly sweet roasted red peppers that deliver a smoky flavor with a touch of spice from the paprika. The pungent taste profiles of this sauce, further sharpened with raw garlic and vinegar, adds the perfect amount of flavor to almost any dish. I will use this sauce on everything! I absolutely love it on vegan breakfast sandwiches. You could use it on pizza as a sauce or as a unique way to change up your pasta.

Equipment

  • Food processor

Ingredients

  • 5 roasted red peppers
  • ½ cup walnuts
  • ¼ cup olive oil
  • 2 cloves garlic
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp smoked paprika
  • 1 tsp Kosher salt

Instructions

  • Add all the ingredients into a food processor and blend until desired texture
  • Use it on pizza or store in the fridge for up to two weeks.

Notes

Consistency of the sauce will thicken in the fridge so please allow it to come to room temperature or reheat in the microwave before using it on pizza.
