packages of speculous cookies

vegan cream cheese

of cookie butter

vegan white chocolate for dipping

cup
of semisweet chocolate for dipping
Melted chocolate and speculous cookie crumbles for decoration
Instructions
Pulse the cookies into fine crumbs in a food processor
In a mixing bowl combine the cookie crumbs, cream cheese, and cookie butter
Chill dough in fridge for an hour
Roll the dough into 40 one inch balls and place on a parchment lined baking sheet
Melt white chocolate in a microwave safe dish at 30 second intervals stirring in between each interval until melted
Use a toothpick to dip dough balls into melted white chocolate and place back on the baking sheet
Repeat steps with semisweet chocolate
Allow chocolate covered dough to set in fridge for 20 minutes
Decorate with melted semisweet chocolate, white chocolate, and cookie crumbs if desired
Notes
Store in the refrigerator for one week or the freezer for one month.
