dried white beans

good olive oil
juice of 1 lemon
2
cloves
garlic
pressed
½
Tbsp
fresh rosemary leaves
chopped
salt and pepper
to taste
vegan parmesan
optional
Instructions
Place beans in a large stock pot and cover with 6 cups of water and boil over high heat.
Once the beans are boiling reduce the heat to medium-low and simmer for 1-2 hours until you are happy with the texture of the beans.
Drain the remaining liquid off the beans and mix with olive oil, lemon juice, garlic, rosemary leaves, and salt and pepper to taste.
Sprinkle with vegan parmesan if using.
Notes
Replace dry beans with two 15 oz cans of cannellini beans if you want to make this recipe quickly.
