Herbed White Beans
Equipment
- stock pot
Ingredients
- 8 oz dried white beans
- 3 Tbsp good olive oil
- juice of 1 lemon
- 2 cloves garlic pressed
- ½ Tbsp fresh rosemary leaves chopped
- salt and pepper to taste
- vegan parmesan optional
Instructions
- Place beans in a large stock pot and cover with 6 cups of water and boil over high heat.
- Once the beans are boiling reduce the heat to medium-low and simmer for 1-2 hours until you are happy with the texture of the beans.
- Drain the remaining liquid off the beans and mix with olive oil, lemon juice, garlic, rosemary leaves, and salt and pepper to taste.
- Sprinkle with vegan parmesan if using.
