Equipment

  • stock pot

Ingredients

  • 8 oz dried white beans
  • 3 Tbsp good olive oil
  • juice of 1 lemon
  • 2 cloves garlic pressed
  • ½ Tbsp fresh rosemary leaves chopped
  • salt and pepper to taste
  • vegan parmesan optional

Instructions

  • Place beans in a large stock pot and cover with 6 cups of water and boil over high heat.
  • Once the beans are boiling reduce the heat to medium-low and simmer for 1-2 hours until you are happy with the texture of the beans.
  • Drain the remaining liquid off the beans and mix with olive oil, lemon juice, garlic, rosemary leaves, and salt and pepper to taste.
  • Sprinkle with vegan parmesan if using.

Notes

Replace dry beans with two 15 oz cans of cannellini beans if you want to make this recipe quickly.
