  • Once oil is warm add in the garlic and fennel seeds and cook until fragrant; about 30 seconds.
  • Add the red onion to the skillet and cook for 2-3 minutes until softened.
  • Next, add the diced tomatoes and deglaze the pan.
  • Then add the white beans and mix in until warm.
  • Add kale and stir in until wilted then remove from heat.
  • Stir in the lemon juice and red pepper flakes. Taste for additional seasoning and add salt and ground black pepper.
  • Top with vegan parmesan if using and serve with warm crusty bread for dipping.
