Tofu Ricotta
This vegan homemade staple can be used on pizza, pasta, or salads and is a great source of plant-based protein.

package of firm tofu

cloves
of garlic

onion powder

Tbsp
nutritional yeast

Tbsp
olive oil

Tbsp
dried Italian seasoning
Juice from ½ lemon
Salt and pepper to taste
Instructions
Drain tofu and wrap in a clean towel. Allow it to sit for at least 15 minutes or longer in the refrigerator.
Mash tofu in a medium mixing bowl.
Add remaining ingredients and incorporate into the tofu.
Notes
I use this tofu ricotta on pizza or to stuff pasta.
