Tofu Scramble Filo Brunch Pizza
Yes, you can eat pizza for all meals…even brunch! The flaky filo crust of this pizza makes it a fun savory addition to any brunch menu.
Equipment
- 1 baking sheet
- 1 Medium skillet
- 1 Chef's Knife
- 1 cutting boards
Ingredients
- 9 sheets of filo dough
- 2 Tbsp olive oil
- 1 recipe tofu scramble see recipe linked above
- ½ cup Daiya cheddar shreds
- 4 Gardein breakfast sausage patties cut into bite sized pieces
- Salt and pepper to taste
Instructions
- Preheat oven to 400° F
- Prepare tofu scramble from recipe above
- Cook Gardein sausage patties according to package
- Prepare the crust by laying one sheet of filo on a sheet of parchment paper and brush lightly with oil and top with another sheet of filo. Repeat this step until you have layered all of the filo dough.
- Brush top layer of filo lightly with oil and fold over edges to create a raised crust and poke all over with a fork.
- Bake in preheated oven for 20 minutes until crisp.
- Spread the tofu scramble over filo dough
- Top with Gardein sausage and Daiya cheddar shreds
- Bake another 15 minutes until filo is golden and flakey.
- Pull from the oven and salt and pepper to taste.
Notes
Amp up the flavors of the pizza even further by using a romesco sauce before adding the tofu scramble layer. Trader Joe’s sells a great Romesco sauce that is vegan friendly in their dip cold dip section.
