Tofu Scramble Filo Brunch Pizza

Yes! You can eat pizza for brunch! The flakey filo crust on this pizza recipe gives it breakfast vibes. Topping it with my healthy tofu scramble recipe not only gives you protein but also a couple servings of vegetables. I recommend Gardein breakfast sausage patties and Daiya cheddar shreds for this recipe.

Notes

Amp up the flavors of the pizza even further by using a romesco sauce before adding the tofu scramble layer. Trader Joe’s sells a great Romesco sauce that is vegan friendly in their dip cold dip section.
