Burrito Bowl Rice

Burrito bowl rice is the perfect base for any bowl that is bringing Mexican flavors. I recommend topping this rice with black beans, salsa, guacamole, vegan sour cream, or vegan cheese. Burrito bowl rice is also tasty on its own and is high in dietary fiber. Let me know what you add to your burrito bowl!

Burrito Bowl Rice

This rice recipe makes a great base for any taco or burrito bowl.

Prep Time 5 minutes
Cook Time 20 minutes
Resting Time 10 minutes
Total Time 35 minutes

Equipment

  • medium saucepan

Ingredients

  • 1 cup brown jasmine rice rinsed and drained
  • 3 cups water
  • 3 Tbsp ancho chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • tsp cayenne pepper
  • ½ tsp kosher salt
  • ground black pepper to taste

Instructions

  • Combine all of the ingredients in a medium saucepan

  • Bring mixture to a boil over high heat
  • Once boiling reduce heat to medium and allow to simmer until water is absorbed; about 20 minutes

  • Turn off the heat and cover the saucepan for 10 minutes to allow the rice to absorb all liquid
