This quick and easy dish can be eaten raw if you do not have time to deal with the oven. Mediterranean food is healthy and full of flavor and the hummus adds an extra boost of protein. I used Violife vegan feta cheese which is super tasty and melts like dairy cheese.
Mediterranean Pita Pizza
This pizza is a quick and easy favorite. You can even eat it raw if you don't have time to deal with the oven.
Ingredients
- 1 pita bread
- ¼ cup hummus
- 2 tsp olive oil
- ¼ cup chopped cherry tomatoes
- ¼ cup spinach leaves
- ¼ cup kalamata olives
- 1 Tbsp Za’atar divided
- 1 oz vegan feta
- 1 pinch of sea salt optional
Instructions
- Instructions
- Preheat oven to 375° F
- Top with hummus, ½ Za’atar, tomatoes, spinach, olives, and feta.
- Mix the olive oil with remaining Za’atar and drizzle over pizza.
- Sprinkle with a pinch of sea salt (optional)
- Bake for 10 – 12 minutes until the pita ia crispy and cheese is melted.
