Chia raspberry stuffed dates covered in dark chocolate are a healthy treat loaded with antioxidants. Every once in a while I get a sweet craving and I am always looking for something with unprocessed sugar. The more natural the sugar the easier it is for my body to digest. These stuffed dates make the perfect go-to dessert when I need something a little indulgent. I keep them in my freezer so they are ready to go when my sweet tooth emerges.

Chia Raspberry Stuffed Dates Covered in Dark Chocolate
Equipment
- Mixing bowls
- Measuring spoons
- baking sheet
Ingredients
- 12 medjool dates pitted
- 1 cup frozen raspberries
- 1 Tbsp chia seeds
- 1 cup vegan dark chocolate chips
- Crumbled freeze-dried raspberries optional for topping
Instructions
- Place the raspberries in a small microwave-safe dish and cook in the microwave for 2 minutes until thawed and a little warm
- Stir the chia seeds into the raspberries and set aside for the mixture to thicken
- Cut a slit longways in the top of the dates
- Stuff each date with 1 ½ tsp of raspberry mixture
- Place dates in the fridge for an hour to firm up
- Melt chocolate chips in a microwave-safe dish 30 seconds at a time stirring in between until the chocolate is smooth and fully melted
- Use a toothpick and dip each date into the melted chocolate and place on a parchment-lined plate or baking sheet
- Sprinkle with crumbled freeze-dried raspberries if using
- Let dates sit in the refrigerator for 1 hour or until chocolate is firm before serving
