Elevate your weekend breakfast with this quick and easy breakfast pizza. The combination of crispy vegetables, smoky vegan bacon, and melty vegan cheese all drizzled with Just egg makes for an amazing vegan recipe that will appeal to everyone.
Bacon, Asparagus, & Shallot Breakfast Pizza
Equipment
- 9" x 13" baking sheet
- chef knife
- cutting board
Ingredients
- 2 tsp olive oil
- 2 packages of crescent roll dough
- ½ bottle Just egg
- ½ bag Daiya cheddar shreds
- 4 strips Sweet Earth vegan bacon
- 1 shallot thinly sliced
- 1 bunch asparagus chopped
- ½ tsp red pepper flakes
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 350° F.
- Cut asparagus and bacon into bite size pieces.
- Saute shallot in oil with a pinch of salt and pepper.
- Add asparagus to shallot and cook until bright green and then add red pepper flakes and remove from heat.
- Line a 9” x 13” baking sheet with parchment paper
- Cover baking sheet with crescent dough triangles and press together to form a crust
- Sprinkle vegan cheese over dough.
- Drizzle Just egg over top of cheese.
- Top with bacon pieces and veggie mixture.
- Sprinkle with dried thyme.
- Cook pizza until Just egg is set and the crust is golden, about 15 – 20 minutes.
Notes
Substitute any vegetables to your own taste. You can also sub any vegan ingredients if you do eat eggs, bacon, and cheese.
