Green poblano sauce is a mixture of green salsa and pesto. The poblano adds a smokey subtle spice and the pumpkin seeds offer texture and crunch. This sauce does not have a ton of ingredients but the layering of pepper, cilantro, pumpkin seeds, lime, and coriander seeds gives this recipe a nice depth of flavor. Use this sauce on tacos, burritos, quesadillas, nachos, bowls, soups, and even salads.
Green Poblano Sauce
Smokey green poblano sauce is quick to make and tastes amazing on burritos, tacos, and in soups and bowls.
Equipment
- Skillet
- Food processor
Ingredients
- 1 large poblano pepper seeded and chopped
- ⅓ cup + ½ Tbsp olive oil divided
- 1 bunch fresh cilantro leaves
- ½ cup shelled pumpkin seeds
- ¼ cup water
- 2 cloves garlic
- 1 tsp coriander seeds
- juice from one lime
- salt and pepper to taste
Instructions
- Heat ½ Tbsp of olive oil over medium heat and saute the poblano until soft; about 5 minutes
- Place the poblano and the remaining ingredients in a food processor
- Pulse until the sauce is combined but not completely smooth. You want to keep some texture
- Taste for additional seasoning
- Serve on tacos, burritos, enchiladas, quesadillas, etc.
Notes
If storing sauce for later place sauce in an airtight container covered with a small layer of olive oil to help preserve the freshness and color. Best if used within 3 days.
