Don’t spend your game day preparing food. Make these quick vegan meatball subs to relax and enjoy the game. Many meatball sub recipes on the internet have you make your own meatballs. Regarding meatball subs, the frozen vegan meatball is superior in texture to any homemade version I have experienced. Much of the recipe prep and cooking is happening simultaneously so this recipe is ready to go in less than 30 minutes.
In my version of this sub, I use three vegan cheeses. I used Violife’s smoked provolone slices, 365 non-dairy mozzarella shreds, and Trader Joe’s shredded parmesan cheese alternative. Please use your favorite plant-based cheese! The key is to use multiple types of cheese to build different flavors.
For the vegan meatballs, I used 365 frozen plant-based meatballs. Trader Joe’s also has good frozen meatless meatballs if you can find them at your store. Gardein plant-based meatballs are my favorite but they are expensive where I live so I only buy them when they are on sale.
Finally, don’t skip on the fresh parsley!!!!!! The fresh herbs really amp up the flavor of this sandwich. If you aren’t a parsley fan try fresh basil.

Quick Game Day Vegan Meatball Subs
Equipment
- small saucepan
- baking sheet
- parchment paper
- Chef's Knife
Ingredients
- 1 package vegan frozen meatballs
- 1 25 oz jar marinara sauce
- 1 long baguette or 4 hoagie rolls
- 4 slices vegan smoked provolone
- 1/2 cup vegan mozzarella shredded
- 1/2 cup vegan parmesan shredded
- 2 Tbsp fresh parsley chopped
Instructions
- Cook meatballs according to package directions.
- Pour marinara sauce into a saucepan, cover, and heat over medium-low stirring occasionally.
- Once the meatballs have finished cooking place them in the warm marinara, stir, and turn off heat.
- Preheat the oven to 400°F.
- Cut the baguette into 4 equal pieces and then slice in half horizontally.
- Top the bottom slice of bread with the shredded mozzarella and parmesan.
- Equally, divide the meatballs in sauce among the four sandwiches. You may not use all of the sauce.
- Break the cheese slices in half and place over the top of the meatballs, sprinkle with 1/2 Tbsp of fresh parsley, and place the other half of the bread on top and press down gently.
- Place the sandwiches on a parchment-lined baking sheet and bake for 10 minutes or until the cheese has melted and the bread is lightly golden.
- Remove from oven and serve the subs with extra marinara sauce on the side.
